The former head chef and chef/owner of some of Seattle’s most renowned restaurants—including Le Gourmand (which he helmed for 28 years!), the Alexis Hotel, and Sambar—Bruce Naftaly is now bringing his locally driven food philosophy to our schoolhouse kitchen! In this class, chef Naftaly will help us discover the magic of Morel mushrooms, seasonal beauties that are only available in the wild here in the Northwest. Woodsy and earthy, yet delicate and rich, they are excellent in a variety of dishes, and chef will guide us through a springtime menu that more than gives them their due: spring greens soup; Copper River Salmon with mussels, lovage and fava greens; butter-poached chicken with morels and asparagus; and, to finish, a strawberry-lavender sorbet. Come and join us as we learn, eat, and enjoy the bounties of spring together!
