The former head chef and chef/owner of some of Seattle’s most renowned restaurants—including Le Gourmand (which he helmed for 28 years!), the Alexis Hotel, and Sambar—Bruce Naftaly is now bringing his locally driven food philosophy to our schoolhouse kitchen! In this spring-themed class, we will celebrate the arrival of springtime asparagus, as the chef guides us through the creation of some fresh new recipes utilizing this kitchen favorite, including: a silky asparagus soup; poached steelhead accented by a sweet cicely and asparagus Beurre Blanc; mushroom duxelles-stuffed pork tenderloin with a mushroom, wild nettle, garlic and asparagus sauce; and finally, an apple, sage, ginger, rosehip and hibiscus sorbet will finish off this lovely afternoon of culinary delights. Come and join us!
