Capture the bright and zesty flavors of winter citrus with this class! Chef Lauren Feldman an accomplished chef who served as the Pastry Chef for Campagne and Cafe Campagne before opening the notable Vif Wine|Coffee and Petite Soif wine bars in Seattle will be our guide, teaching us how to preserve the winter’s bounty of oranges, lemons, and more when they are right at their peak. During our time in the Larder, Lauren will demonstrate how to create: A bright Meyer lemon curd, that will then be used in a tart with candied citrus peel; a blood orange marmalade that is ripe for your next cheese board, especially when paired with a salty cheese; fresh limoncello for sipping as well as a tangerine granita intermezzo, and finally, salt-preserved lemons that can be used in a myriad of recipes like the winter tabbouleh and preserved lemon chicken that we will enjoy together along with the other fruits of our labor (and a glass – or two – of wine). Lauren Feldman

Lauren Feldman is an accomplished chef with 30 years of experience cooking in San Francisco, Italy, and Seattle. Her passion lies with honoring quality ingredients and maintaining a strong connection to agriculture and local farmers. The farm-to-table food cycle has shaped her career. Here in Seattle, Lauren was the Pastry Chef for Campagne and Cafe Campagne. She then was a private chef for several years before she worked at McCarthy and Schiering Wine Merchants to learn about wine. This led her to open Vif Wine|Coffee, an all day cafe in Upper Fremont with a focus on natural wines and house-made food and pastries. She also opened Petite Soif, a natural wine bar on Beacon Hill. Both businesses reflected her strong commitment to wholesome, locally and globally sourced ingredients. Most recently Lauren has been spending her time developing and teaching workshops and classes both online and in person.
