Spend the day at the farm learning the art of traditional Italian sausage making with Seamus Platt of Norcino Salumi. We’ll work in small teams to make two styles of sausage, with expert guidance on ingredients, tools, and technique. Next, we’ll learn the art of wood-fired pizza cookery with Tam Nguyen of Tam Tam Pizza, using our handmade sausage and a spread of seasonal toppings and Bellsong Creamery cheeses to craft delicious, personalized pies.

As the afternoon unfolds, enjoy a glass of wine, take in the beauty of the farm, and sample cheeses from our own Bellsong Creamery. You’ll head home with your handmade sausages, wood-fired pizzas, and a full stomach to match.

Seamus Platt

A 4th generation Seattleite, Seamus Platt traded aprons for adventure after close to 20 years in the restaurant industry. Drawn to the art of salumi after working in Michelin star kitchens, he entered the world of cured meats with his company, Norcino Salumi. Descended from a grandfather that was a butcher at Pike Place Market, Seamus honed his craft working with master butchers and Italian norcini, the traditional name for a pork butcher that specializes in salumi. He now crafts his own stories in every savory slice, committed to preserving the time-honored technique as Norcino is involved in every step of production, from breeding to slaughter.

The Instructor

Tam Nguyen

Tam Nguyen is the owner of Tam Tam Pizza, a mobile pizzeria born from a deep love for good food, local farms, and plenty of trial and error. Without formal culinary training or mentorship from a famous pizzaiolo, Tam dove headfirst into the world of great pizza—learning everything possible and building a business from scratch, one dough ball at a time. Tam’s classes here at the Farm are less about polished technique and more about proving that pizza-making is within reach for anyone. Tam shares the real story—what worked, what flopped, and what ultimately made all the difference. No fancy gear or formal credentials required—just curiosity, patience, and a willingness to get your hands messy.

Refund Policy

We understand that plans change! While payments for workshops and events at Bella Luna Farms are non-refundable, you’re always welcome to transfer your spot to a friend if you can’t make it.

We’re also happy to offer credit toward a future event—provided we’re able to fill your spot. Giving us as much advance notice as possible helps increase the chances of finding someone, so please reach out as soon as you know you can’t attend. We’ll contact our waitlist and keep you posted.

In the rare event that we need to cancel a class due to weather or instructor illness, your enrollment can be transferred to a future class or refunded.
