Capture the bright and zesty flavors of winter citrus with this class! Chef Lauren Feldman an accomplished chef who served as the Pastry Chef for Campagne and Cafe Campagne before opening the notable Vif Wine|Coffee and Petite Soif wine bars in Seattle will be our guide, teaching us how to preserve the winter’s bounty of oranges, lemons, and more when they are right at their peak. During our time in the Larder, Lauren will demonstrate how to create: A bright Meyer lemon curd, that will then be used in a tart with candied citrus peel; a Seville orange marmalade that is ripe for your next cheese board, especially when paired with a salty cheese; fresh limoncello for sipping, and finally, salt-preserved lemons that can be used in a myriad of recipes like the winter tabbouleh and preserved Lemon Chicken that we will enjoy together along with the other fruits of our labor (and a glass – or two – of wine).
