MasterClass – join us in the larder…
An immersive hands-on culinary week at the Farm…
Spend a week at Bella Luna Farms in a five-day culinary MasterClass designed for home cooks who want to hone their skills, cook with more confidence, understand the why behind proper technique, and enjoy a few beautiful days learning, eating, and gathering well.
Culinary “Summer Camp” for Adults…
Part cooking school, part farm school, the week will move between the kitchen, garden, orchard, larder, and table, with each day shaped by what we are cooking, what is in season, and what is happening on the Farm.
A hands-on approach will carry throughout the week, beginning with the fundamentals and techniques such as knife sharpening and knife skills, the practice, purpose, and benefit of mise en place, how to properly season and enhance flavors, and the basics of making stocks and classic sauces. From there, we will explore how ingredients and techniques build on one another, moving through both savory cooking and basic pastry skills.
We will also spend time preserving the flavors of the season, with a half-day devoted to basic preservation techniques such as pickling, curing, and fermenting. Throughout the week, there may be projects that begin one day and are finished or enjoyed later, reinforcing how planning, preparation, and technique come together in a working kitchen.
Depending on the day, we may begin in the kitchen, head outside to learn about and gather herbs, fruits, and produce from the garden with one of our chefs or guest instructors. Shared meals, garden discussions, seasonal ingredients, and take-home projects will be woven throughout the week.
Class will begin each morning at 9 am and will run until approximately 4:30 pm. Meals will be available each day, some prepared together as part of class and others by our chef team.
Midweek, we will leave the Farm for lunch at a local farm-to-table restaurant, offering another perspective on seasonal cooking, sourcing, and hospitality before returning to the Farm to continue learning.
Friday will bring many of the week’s lessons together, with time to finish projects begun earlier in the week and prepare for our farewell dinner. Plus-ones will be invited to join us that evening for the meal we create together.
You will leave with new skills, a deeper understanding of ingredients and technique, and plenty of practical knowledge to bring back to your own kitchen, along with the experience of having spent a week cooking, learning, and gathering at the Farm.
