This hands-on training session was created especially for those working in the food industry—whether you’re a chef, cheesemonger, distributor, baker, caterer, or part of a taproom/tasting room staff. If you work with cheese in any capacity, this class is for you!

Led by Dr. Courtney Johnson, co-owner of Street Cheese and a top-ranked cheesemonger both nationally and internationally, you’ll dive into a variety of topics designed to elevate your cheese knowledge and skills. During this course, we’ll cover:

-Best practices for cutting and portioning cheese

-Rind care and cheese storage techniques

-Troubleshooting cheese quality and longevity

-Food safety considerations for cheese

-Selecting the perfect cheeses for your menu or event

Courtney Johnson

Street Cheese is a mobile cheese shop founded in 2020 by two career cheesemongers, Courtney Johnson and Tailor Kowis. They sell local, domestic and imported cheeses, charcuterie and accompaniments, crafts cheese and charcuterie plates, platters and grazing tables, as well as offer cheese education classes and tastings for the general public and industry. Street Cheese’s mission is three-fold: to support local cheesemakers and farmers in getting their products to market, to make good cheese more widely available in our communities, and to spread the word that cheese is for everyone. Courtney is an American Cheese Society Certified Cheese Professional and Certified Cheese Sensory Evaluator. She is also Executive Director of the Washington State Cheesemakers Association and an adjunct faculty member at Seattle Central College’s Seattle Culinary Academy.

Refund Policy

We understand that plans change! While payments for workshops and events at Bella Luna Farms are non-refundable, you’re always welcome to transfer your spot to a friend if you can’t make it.

We’re also happy to offer credit toward a future event—provided we’re able to fill your spot. Giving us as much advance notice as possible helps increase the chances of finding someone, so please reach out as soon as you know you can’t attend. We’ll contact our waitlist and keep you posted.

In the rare event that we need to cancel a class due to weather or instructor illness, your enrollment can be transferred to a future class or refunded.
