Join us for an intimate seasonal workshop with Chef Bruce Naftaly—celebrated as the “Father of Northwest Cuisine” and a pioneer of Seattle’s farm-to-table movement. In this late-winter class, Chef Bruce brings his French-inspired approach to a menu that warms the season and hints at early spring. You’ll start with a silky roasted fennel and parsnip soup, then move into a savory rice pudding with wild mushrooms—a rustic French staple with Northwest character. The centerpiece is a classic boeuf à la ficelle, delicately poached and served with a lush Cabernet pressings sauce (with a bit of Cabernet pressing to take home!). To finish, you’ll make a bright apple, Calvados, and tarragon sorbet that cuts through winter’s richness with clean, simple flavor. Throughout the workshop, Chef Bruce will share his signature blend of technique, storytelling, and seasonal Northwest sensibility for a comforting end-of-winter feast.

 

At each Bella Luna class you will get the chance to enjoy Bellsong Creamery cheeses, sip a glass of something special, and gather around a beautifully prepared meal.

Bruce Naftaly

Over the years, Chef Bruce Naftaly has been hailed by local and national press as “the Father of Northwest Cuisine” and Seattle’s “Food Hero”, and has long been considered one of the pioneers of the local farm-to-table movement. The former head chef and chef/owner of some of Seattle’s most renowned restaurants—including Le Gourmand (for 28 years!), the Alexis Hotel and Sambar —Naftaly is now bringing his locally driven food philosophy to your table as a personal chef and instructor. An avid supporter of local organic producers, the PCC Land Trust and other organizations dedicated to preserving local farmland and sustainability, Naftaly also offers custom meal preparation, is available for special events, and often teaches group cooking classes like the ones he hosts here at Bella Luna.

Refund Policy

We understand that plans change! While payments for workshops and events at Bella Luna Farms are non-refundable, you’re always welcome to transfer your spot to a friend if you can’t make it.

We’re also happy to offer credit toward a future event—provided we’re able to fill your spot. Giving us as much advance notice as possible helps increase the chances of finding someone, so please reach out as soon as you know you can’t attend. We’ll contact our waitlist and keep you posted.

In the rare event that we need to cancel a class due to weather or instructor illness, your enrollment can be transferred to a future class or refunded.
