Pudgy, chewy, slurpy udon noodles are the definition of comfort food, and in this hands-on class you will make them the traditional way: by foot-stomping the dough. Join instructor Tracy Matsue Loeffelholz to mix, knead, roll, and hand-cut your own noodles using Cairnsprings Edison T85 flour. No special equipment needed, just a little energy (and your good socks).

 

We will taste our udon three ways: dipped in a rich walnut miso sauce, swirled into classic Kakejiru broth with mirin, soy sauce, and bonito dashi, and stir-fried Yaki-Udon with pork and seasonal vegetables. Enjoy it all with a sparkling umeshu cocktail, then head home with the noodles you made, printed recipes, and a deeper understanding of Washoku, the traditional Japanese food culture that makes cooking both joyful and nourishing.

 

At each Class on the Farm you will get the chance to enjoy Bellsong Creamery cheeses, sip a glass of something special, and gather around a beautifully prepared meal.

Tracy Matsue Loeffelholz

Rooted in the Japanese food traditions of Hawai‘i, Tracy Matsue Loeffelholz brings generations of washoku wisdom to her teaching. A lifelong student of Japanese home cooking, she has studied deeply through chef Elizabeth Andoh’s Tsudoi Project and continues her education through regular travel to Japan. Tracy teaches throughout the region, including on Bainbridge Island and in Seattle, and is known for making traditional techniques approachable, joyful, and deeply nourishing. A recipe developer, food stylist, and culinary educator, her work bridges culture, health, and craft—inviting students to cook with intention, curiosity, and plenty of fun.

Refund Policy

We understand that plans change! While payments for workshops and events at Bella Luna Farms are non-refundable, you’re always welcome to transfer your spot to a friend if you can’t make it.

We’re also happy to offer credit toward a future event—provided we’re able to fill your spot. Giving us as much advance notice as possible helps increase the chances of finding someone, so please reach out as soon as you know you can’t attend. We’ll contact our waitlist and keep you posted.

In the rare event that we need to cancel a class due to weather or instructor illness, your enrollment can be transferred to a future class or refunded.
