Join us at Bella Luna for an afternoon with Chef Lauren Thompson of Seattle’s Café Lago, centered on the technique behind the restaurant’s famously light lasagna. Whisper-thin sheets of pasta are layered eight times with bright marinara, silky béchamel, and a blend of ricotta and Parmigiano-Reggiano, then baked gently to keep the finished dish rich but not heavy.

Chef Lauren will walk guests through pasta handling, layering, and baking, focusing on the details that make this lasagna cohesive, tender, and balanced. The afternoon ends with a generous shared meal prepared by Chef Lauren, featuring the lasagna alongside an antipasto, seasonal salad, and dessert. Drawing on her time at Café Juanita and Café Lago, she will keep the focus on technique, flavor, and how to make this style of lasagna work in a home kitchen.

 

At each Class on the Farm you will get the chance to enjoy Bellsong Creamery cheeses, sip a glass of something special, and gather around a beautifully prepared meal.

Lauren Thompson

Chef Lauren Thompson is the Head Chef at Seattle’s beloved Café Lago, where she brings a thoughtful, ingredient-driven approach to classic Italian cooking. Prior to joining Café Lago, Lauren spent a decade as Chef de Cuisine at the renowned Café Juanita, honing her craft with a deep respect for seasonality, technique, and simplicity. At Lago, she honors the restaurant’s Italian roots while infusing the kitchen with fresh energy—highlighting local produce, cheeses, and meats and elevating familiar dishes with a refined, modern touch.

Refund Policy

We understand that plans change! While payments for workshops and events at Bella Luna Farms are non-refundable, you’re always welcome to transfer your spot to a friend if you can’t make it.

We’re also happy to offer credit toward a future event—provided we’re able to fill your spot. Giving us as much advance notice as possible helps increase the chances of finding someone, so please reach out as soon as you know you can’t attend. We’ll contact our waitlist and keep you posted.

In the rare event that we need to cancel a class due to weather or instructor illness, your enrollment can be transferred to a future class or refunded.
