Discover the versatility of a single dough or batter for both sweet and savory recipes! Join Chef Lauren Feldman—renowned Pastry Chef formerly of Campagne and Café Campagne, and co-founder of Seattle’s beloved Vif Wine|Coffee and Petite Soif wine bars—for this engaging hands-on class. She will teach us the secrets to flaky, tender, and rich galette dough, and then utilize this go-to recipe in a winter squash version accented with Bellsong Creamery cheese, plus a sweet roasted pear galette and apple hand pies. We’ll also make a beautiful crepe batter to use in both our sweet—caramelized apples and ice cream, plus sweet ricotta—and savory—a classic ham and cheese—creations. Finally, we’ll create a showstopping no-knead brioche dough that can be used for either caramelized onion and Fromage Blanc kolache or sweet cinnamon raisin rolls. We’ll sample the beautiful finished creations together, so come hungry and ready to learn!
