Discover the versatility of a single dough or batter for both sweet and savory recipes! Join Chef Lauren Feldman—renowned Pastry Chef formerly of Campagne and Café Campagne, and co-founder of Seattle’s beloved Vif Wine|Coffee and Petite Soif wine bars—for this engaging hands-on class. She will teach us the secrets to flaky, tender, and rich galette dough, and then utilize this go-to recipe in a winter squash version accented with Bellsong Creamery cheese, plus a sweet roasted pear galette and apple hand pies. We’ll also make a beautiful crepe batter to use in both our sweet—caramelized apples and ice cream, plus sweet ricotta—and savory—a classic ham and cheese—creations. Finally, we’ll create a showstopping brioche dough that can be used for either caramelized onion and Fromage Blanc kolache or sweet cinnamon raisin rolls. We’ll sample the beautiful finished creations together, so come hungry and ready to learn!

Lauren Feldman

Lauren Feldman is an accomplished chef with 30 years of experience cooking in San Francisco, Italy, and Seattle. Her passion lies with honoring quality ingredients and maintaining a strong connection to agriculture and local farmers. The farm-to-table food cycle has shaped her career. Here in Seattle, Lauren was the Pastry Chef for Campagne and Cafe Campagne. She then was a private chef for several years before she worked at McCarthy and Schiering Wine Merchants to learn about wine. This led her to open Vif Wine|Coffee, an all day cafe in Upper Fremont with a focus on natural wines and house-made food and pastries. She also opened Petite Soif, a natural wine bar on Beacon Hill. Both businesses reflected her strong commitment to wholesome, locally and globally sourced ingredients. Most recently Lauren has been spending her time developing and teaching workshops and classes both online and in person.
