Join us at Bella Luna Farms as Meghan McKenna, the professional cheese and buttermaker of Bellsong Creamery, teaches us how to hand make traditional French-style cultured butter at home. To begin, we will use local cream to create luscious Crème Fraîche. We will then move on to buttermaking. We will also teach you how to make compound butters as well as a classic buttermilk dressing from scratch using our just-made buttermilk. A seasonal spring lunch featuring cheeses and butters from Bella Luna Farms’ own Bellsong creamery will be served midway through class. You will leave the class equipped with a host of recipes, plus all the skills you need to recreate the buttermaking process at home.

 

At each Class on the Farm you will get the chance to enjoy Bellsong Creamery cheeses, sip a glass of something special, and gather around a beautifully prepared meal.

Cheesemaker Meghan McKenna

Meghan McKenna is a professional cheese and buttermaker new to Bellsong Creamery. She is also building her own family farmstead sheep creamery, Woolley Cheese Co., in the Skagit Valley. She farms with her husband, Shawn, and two young daughters. Meghan has created fresh pasteurized cheeses, bloomy rinds, washed-rind and raw-aged, natural-rind cheeses in addition to other fermented dairy products. Meghan has completed cheesemaking and food safety courses at OSU, WSU, Cal Poly and through the American Cheese Society and Food Safety Preventive Controls Alliance.
