Get ready to roll up your sleeves and dive into pie making with Pastry Chef Samantha Gainsburg of Butter Shtick. Using whole-grain flours from Chimacum Grainery and Smalls Family Farm, you’ll learn the secrets to a flaky, flavorful crust—mixing, rolling, crimping, and blind baking—before watching it all come together with a spiced pumpkin custard filling. Everyone will roll out their own dough to take home, perfect for your Thanksgiving feast.

We’ll break for a cozy farm lunch of vegetable galettes made with the same dough you’ve been practicing, served alongside Bellsong cheeses and a seasonal garden salad. When class wraps up, you’ll head home with your hand-rolled dough, recipes for the perfect apple and pumpkin pies, plus a sugar pumpkin and a bag of apples from the farm—everything you need to wow your holiday table.

Samantha Gainsburg

Pastry Chef Samantha Gainsburg is the mind behind Butter Shtick, a multi-faceted creative outlet based in Seattle. Previously in charge of the pastry programs at Mamnoon, Canlis, Cafe Juanita and Temple Pastries locally, she also draws from her time in New York and Las Vegas, as well as multiple culinary trips to Turkey, to embody these experiences through beautifully crafted and delicious pastries. Samantha is particularly committed to seasonality, locality, and sustainability through the use of local flours, fruits, and botanicals. Butter Shtick products can be found through pop-ups, custom orders, and workshops.

Refund Policy

We understand that plans change! While payments for workshops and events at Bella Luna Farms are non-refundable, you’re always welcome to transfer your spot to a friend if you can’t make it.

We’re also happy to offer credit toward a future event—provided we’re able to fill your spot. Giving us as much advance notice as possible helps increase the chances of finding someone, so please reach out as soon as you know you can’t attend. We’ll contact our waitlist and keep you posted.

In the rare event that we need to cancel a class due to weather or instructor illness, your enrollment can be transferred to a future class or refunded.
